What are the command or commands to use to restore the backups?

You would upload the file back to your server, and then go through your ensim control panel and follow the restore directions.

I have the file (backup.pl) running in /etc/cron.daily. I don't know where to put it to let the ensim GUI to find it.

Ensim need not find backup.pl, it need only find the tar file created by the script. When you do the restore, you can supply to path to the ensim control panel.
